Ingredients

100 gRolled oats
200 gHigh grade flour (Main)
25 gButter, grated
75 gCaster sugar
½ tspSalt
1 tspBaking soda
2 tspMixed spice
50 gSultanas
50 gRaisins
50 gCandied mixed peel
1 ½ cupsButtermilk
2 tspBrown sugar

Directions

  1. Preheat the oven to 200°C. Line a baking tray with baking paper.
  2. Place the rolled oats and the flour in a large bowl. Mix the butter in with a knife. Stir in the caster sugar, salt, baking soda, mixed spice and dried fruits.
  3. Pour in the buttermilk, quickly stirring with a knife. Tip onto a floured benchtop and gently form the dough into a round. Place on the baking tray. Sieve the brown sugar over the top. With a floured knife cut a cross in the top of the loaf.
  4. Bake for 35-40 minutes, until crusty on the outside and a skewer inserted in the centre comes out clean. Serve thickly sliced and buttered — either warm or cold.
