The Edmonds Cookbook has screeds of recipes for more picnic pleasers. Here's their classic peanut brownie recipe with a few extra add-ins from the cupboard.

Ingredients

125 gButter
1 cupSugar
1Egg
1 ½ Plain flour
1 tspBaking powder
1 pinchSalt
2 TbspCocoa powder (Main)
1 cupRoasted peanuts (Main)
¾ cupChocolate chips (Main)
1 handfulDried cranberries

Directions

  1. Cream butter and sugar until light and fluffy. Add egg and beat well.
  2. Sift flour, baking powder, salt and cocoa together. Mix into creamed mixture.
  3. Add peanuts, chocolate and dried cranberries and mix well.
  4. Roll tablespoonsful of mixture into balls. Place on greased oven trays. Flatten with a floured fork. Bake at 180C for 15 minutes.
