Winter is a time of hearty meals for cold days, but sometimes it’s good to add a winter salad into the mix for a change. This nutrient-rich salad can be served as a side dish or a nourishing lunch.
Crisp cabbage and apple salad
Serves four
Ingredients
2 cups green cabbage, shredded
1 cup red cabbage, shredded
2 apples
½ cucumber
1 avocado
½ cup shelled edamame
3 Tbsp pumpkin seeds, lightly toasted
Fresh dill
Sour cream vinaigrette dressing
¼ cup sour cream
1 Tbsp apple cider vinegar
1 tsp wholegrain mustard
2 Tbsp extra Virgin olive oil
Salt and pepper to taste
Method
- Whisk all the ingredients for the sour cream vinaigrette together in a small bowl and set aside.
- Place the shredded red and green cabbage on a large tray or platter.
- Slice the apple, cucumber, and avocado and arrange over the cabbage with the shelled edamame.
- Sprinkle the toasted pumpkin seeds and some snipped dill over the vegetables and drizzle with the sour cream vinaigrette dressing.
