Winter is a time of hearty meals for cold days, but sometimes it’s good to add a winter salad into the mix for a change. This nutrient-rich salad can be served as a side dish or a nourishing lunch.

Crisp cabbage and apple salad

Serves four

Ingredients

2 cups green cabbage, shredded

1 cup red cabbage, shredded

2 apples

½ cucumber

1 avocado

½ cup shelled edamame

3 Tbsp pumpkin seeds, lightly toasted

Fresh dill

Sour cream vinaigrette dressing

¼ cup sour cream

1 Tbsp apple cider vinegar

1 tsp wholegrain mustard

2 Tbsp extra Virgin olive oil

Salt and pepper to taste

Method

  1. Whisk all the ingredients for the sour cream vinaigrette together in a small bowl and set aside.
  2. Place the shredded red and green cabbage on a large tray or platter.
  3. Slice the apple, cucumber, and avocado and arrange over the cabbage with the shelled edamame.
  4. Sprinkle the toasted pumpkin seeds and some snipped dill over the vegetables and drizzle with the sour cream vinaigrette dressing.
